Never have I heard of POC sushi. If you’re anything like me, you were there like… 🤷🏻‍♀️? Scratching my head. Smiling like I got a clue. Seriously. Proof of concept, right? But no.Turns out, in the sushi world POC is its own thing. And once you taste it, you kinda get it.

So… in all seriousness, what is POC in sushi? It’s been compared with omakase, and even casual brands like Omakai. Basically, it’s a tasting format where chefs play gets creative—chill, but not stiff. You’re not stuck in some “rules only” omakase counter where everyone whispers.

And Miami… oh Miami. This city eats up every trend. Wynwood, Brickell—they’ve tried all sorts of new formats. But Coral Gables? That’s where Sushi KONG took the idea and ran with it.

Traditionalists still love their omakase etiquette (don’t dip your nigiri in soy, don’t ask for extra wasabi, etc.). But POC sits right in the middle: not “cheap sushi near me” rolls, not ultra-pricey fancy sushi either. Something in-between.

Another buddy once asked me at the table: “Wait, what is masago? And also, what is kani tempura?” We laughed, Googled, learned, ate. That’s the POC vibe: learn while you taste.

Tourists typing “sushi restaurants in Wynwood” just want the trendy bite for the gram. Coral Gables, with Miracle Mile, somehow attracts both: professionals, couples, curious eaters. Sushi KONG manages to give all of them something real.

Now, if you zoom out: in Tokyo, omakase is untouchable. In New York, omakase -style seats can run you hundreds. But Coral Gables shows another way. POC here = premium without pretension. Affordable luxury. You don’t need to be a sushi snob to enjoy it.
